Recipe(tried): Carrot Ring Mold with Peas and Pearl Onions (using Swiss cheese)

It might help you a bit.
CARROT RING MOLD
2 1/2 lbs peeled carrots
12 Tbsp butter
2/3 cup chicken broth
1 1/2 Tbsp sugar
2 eggs
1/2 cup grated Swiss Cheese
Salt and ground black pepper, to taste
Chopped fresh parsley, to taste (optional)
Frozen peas and pearl onions, cooked (for serving)
Slice carrots thickly into medium saucepan. Cover with cold water and cook over high heat until water boils. Drain.
Simmer carrots in butter, stock, sugar and salt in medium saucepan until liquid is absorbed and carrots are very tender (this takes 45-60 minutes). Mash carrot mixture. Let cool.
Mix cooled carrot mixture well with eggs, cheese, salt and pepper and parsley. Press into well-buttered baking dish.
Bake in 350 degree F oven for 20-25 minutes.
Serve with frozen peas and pearl onions cooked according to package directions.
