Recipe(tried): Carrot Salad with Raisins and Nuts

Lisa, I have only made this salad once. I thought it was simply grated carrots, raiains and mayonnaise but in case you are looking for something more, here is a recipe from Joy of Cooking.

Carrot Salad with Raisins and Nuts
Yield: 4 servings

Scrape well: (or peel with a vegetable peeler)
4 carrots
Place them on ice for 1 hour(I can't imagine that this is necessary if your carrots are really fresh or new). Grate them coarsely with a grater or food processor and place them in a bowl. Add and mix lightly:

1/2 c. seedless raiains
1/2 c. coarsely chopped pecans or peanuts
3/4 tsp. salt
Freshly ground black pepper
2 tsp. freshly grated lemon peel
1 Tbl. freshly squeezed lemon juice
Add: 1 c. sour cream

Toss lightly
