Recipe(tried): Cashew Salad

My daughter brought this recipe to me a few weeks ago and I have made and served it many times since, all with great reviews.

CASHEW SALAD

Toss together (sorry there are not exact measurements here):
Romaine lettuce, torn or rough chopped
shredded parmesan cheese
cashews, rough chopped or broken

Just before serving, toss with:

DRESSING:
1 cup salad oil
3/4 cup granulated sugar
1/3 cup white or cider vinegar
1 tsp. minced onion (I used more because I had Vidalias)
1 tsp. yellow mustard
1 tsp. poppy seed

Shake together in a jar until sugar is dissolved
(1/2 batch of dressing is plenty for a salad but I bet you will be making this one more than once)

Note: we had some salad left and the next day (it was not too wilted) we made wraps with sliced chicken breast, the salad and tomato. They were wonderful too.
