Cassava Fries in Garlic Oil (Yuca con Mojo de Ajo)
4 large garlic cloves, peeled and chopped
1 sprig fresh thyme (or cilantrillo)
1/2 cup sunflower or other vegetable oil
3 pounds yuca (cassava)
2 guarts water combined with 1 tablespoon salt
1 cup corn oil
Combine the garlic, thyme or chopped cilantro, and oil. Set aside. Peel the yuca and cut it in "steak fry" 3x1/2x1/2-inch strips (or use frozen. Boil the salted water in a large soup pot, add the yuca (cassava), and cook for 30 minutes. Do not overcook; the yuca should have a firm texture. Drain and pat dry with paper towels.
