COCONUT-WATERMELON SALAD
WITH LIME-HABANERO DRESSING

LIME-HABANERO DRESSING:
1/4 cup fresh lime juice
2 teaspoons sugar
1 teaspoon minced Habanero pepper
Salt, to taste
SALAD:
1 cucumber, unpeeled, seeded and diced
1 cup diced watermelon
1/4 cup shredded coconut, lightly toasted, for garnish
Chopped fresh mint, for garnish
To make the dressing, combine all the ingredients in a salad bowl and stir well. Allow to sit at room temperature for 1 hour to blend the flavors.
To make the salad, combine the cucumber and watermelon, add the dressing and toss until thoroughly coated. Sprinkle the coconut and mint over the top and serve.
Makes 2 to 4 servings
