Recipe: Cheddar's Restaurant Santa Fe Spinach Dip

CHEDDAR'S SANTA FE SPINACH DIP

1 medium onion, chopped
1 (8 ounce) can diced tomatoes, canned
1 (4 ounce) can green chiles, drained and chopped
2 cans (14 1/2 ounce each) spinach
1 (8 ounce) package cream cheese, softened
1 cup half and half
1 tablespoon red wine vinegar
salt and pepper to taste
10 ounces Monterey jack cheese, shredded
TO SERVE:
2 tablespoons sour cream
tortilla chips

Saute onion in skillet over medium until softened.

Add tomatoes and chilies and then cook 2 minutes.

Transfer to large bowl and stir in spinach, cheese, cream cheese, half and half, and vinegar. Season with salt and pepper.

Spoon mixture into shallow baking dish.

Bake in a 400 degrees F oven until dip is bubbly and top is light brown, about 35 minutes.

Top with a spoon of sour cream and serve with tortilla chips.
