Recipe: Cheese Spread (using cottage cheese, Cuisinart food processor recipe)

"Spreads that taste this good are usually not so low in calories. Serve with crackers, toast or vegetables."
4 ounces blue cheese or extra sharp cheddar or Parmesan
12 ounces cottage cheese
5 to 6 drops Tabasco sauce (or to taste)
Cut cheese into 1-inch pieces and process with metal blade until very smooth.
Add 3 ounces of cottage cheese and process until completely smooth, stopping to scrape inside of bowl as necessary. Add remaining cottage cheese and process until smooth.
Add Tabasco sauce to taste. If mixture is too thick, add up to 4 tablespoons of skim milk or port wine, one tablespoon at a time, processing after each addition and checking texture before adding more.
Makes about 1 3/4 cups
