Recipe: Cheesy Shrimp Dip for Elma

CHEESY SHRIMP DIP
This is a favorite recipe from the National Marine Fisheries Service.

1 lb. raw, peeled and de-veined shrimp
1/2 C. butter or margarine
1/2 C. finely chopped onions
1/4 C. finely chopped bell pepper
1 lb. diced American process cheese
1 tsp. sherry
1/2 C. catsup
1 T. Worcestershire sauce
1/4 tsp. pepper
2 drops liquid hot pepper sauce

Chop shrimp. In a large mixing bowl combine shrimp, butter and vegetables. Cover and microwave on HIGH for 5 minutes. In another bowl, combine remaining ingredients. Cover and microwave on MEDIUM for 4 minutes, stirring twice. Combine both mixture and reheat on LOW for 2 minutes. Serve hot with crackers, chips or fresh fruit wedges. makes 3 cups dip.
