Recipe: Cherry Banana Jewel Cake (using cake mix)

CHERRY BANANA JEWEL CAKE

1 (18 ounce) box vanilla-flavored or white cake mix
1 cup water
FOR THE TOPPING:
1/4 cup orange juice
1/4 cup sugar
1 tablespoon grated orange peel
2 cups dark sweet cherries, fresh or frozen
3 bananas, sliced

Prepare cake mix as directed, but add only 1 cup of water. Pour into a greased 13-by-9-inch baking pan. Set aside.

Heat orange juice, sugar and grated peel in medium saucepan until hot while stirring until sugar is dissolved. Add cherries and simmer until blended through. Add bananas. Continue cooking for 1 minute. Remove from heat. Evenly spoon cherry-banana mixture over cake. Don't stir.

Bake at 350 degrees 35-40 minutes, or until lightly browned.

Makes 1 (13x9-inch) cake
