Recipe: Cherry Pudding (using canned cherries)

CHERRY PUDDING

1/2 cup sugar
1/4 cup margarine
1 egg
2 1/2 cups flour
2 tsp. baking powder
1 cup milk (fat free milk may be used)
1 cup canned cherries, drained

Preheat oven to 350 degrees F. Grease a 9-inch baking dish.

Cream together sugar and margarine, add egg and beat well.

Combine flour and baking powder.

Alternately add to creamed mixture with milk. Blend well.

Stir in cherries. Pour batter into prepared baking dish.

Bake at 350 degrees F for 30-35 minutes, or until lightly browned.
