This recipe calls for cherry tomatoes, but I don't know why you couldn't use coarsely chopped regular tomatoes:
Cherry Tomato Preserves
1 1/2 cups cherry tomatoes
2 1/2 cups sugar
1/2 tsp. salt
1 lemon, thinly sliced
1/4 tsp ground cloves
1/4 tsp ground allspice
1/4 tsp. ground cinnamon
1 (1 3/4-oz) package powdered fruit pectin
With sharp knife, cut shallow X in base of each tomato, then place in large pot of rapidly boiling water just until skin begins to loosen. Rinse under cold water and remove skins, taking care to keep tomatoes whole, if possible. Measure tomatoes and combine 2 1/2 cups tomatoes with sugar. Cover and refrigerate overnight.
Next morning, combine tomatoes and sugar with salt, lemon, spices, and pectin in heavy preserving kettle. Bring mixture to a boil, stirring constantly. Boil gently until thickened, about 10 minutes.
Ladle into hot sterilized jar and process 10 minutes in boiling water bath. Makes 3-4 half-pint jars.
I also have (untried) recipes for Spiced Tomato Relish, Tomato-Pear Chutney, and Tomato Chutney, so if you want any ot those, just sing out!
