Recipe: Chick Pea Burgers (food processor)

Main Dishes - Meatless
CHICK PEA BURGERS

1/3 cup chopped carrots
1/3 cup herbed croutons
1 (15 ounce) can chick peas, rinsed and drained
1/4 cup chopped fresh parsley
1/4 cup chopped onion
1/2 teaspoon ground black pepper
Pinch salt
1 egg white
1 teaspoon minced garlic
1 teaspoon lemon zest
Nonstick cooking spray
FOR SERVING:
whole-grain hamburger buns
Tomato slices
Lettuce leaves
Prepared salsa

Pulse all ingredients except buns, tomato, lettuce and salsa in bowl of food processor fitted with metal blade. Shape mixture into 4 patties.

Spray 12-inch skillet with cooking spray; place over medium heat. Add patties to pan; cook 4 to 5 minutes or until browned. Spray tops of patties with cooking spray; turn and cook 4 to 5 minutes or until browned.

TO SERVE:
Serve between buns topped with tomato, lettuce and salsa.

Makes 4 burgers
