CHICKPEA GOURMET
1/2 cup chopped onion
2 Tbsp curry*
2 Tbsp margarine
2 cans (1 lb each) chickpeas, drained and rinsed**
1 (1 lb) can stewed tomatoes
1 can coconut milk
hot cooked rice (to serve)
In a large saucepan brown onions and curry in the margarine.
Add all other ingredients and simmer 20 minutes.
Serve over rice.
*For spicier recipe add more curry.
**You may replace the chickpeas with chicken breasts chopped into cubes.
Servings: 4
