Recipe(tried): Chicken and Broccoli Casserole Supreme, Romaine Salad with Feta, Mandarin and Cranberries

Another cold day here in Central Florida with another cold front approaching this evening. What's a cook to do for her family? Make a nice warm casserole!! We love this casserole because of the flavors and crunch...ideally, it goes well with rolls to be able to sop up the wonderful sauce it makes, but bread is a no-no around here!! Instead I will serve it alongside a nice salad that has lots of flavors and textures in it. For dessert, a nice cool sugar-free Jello strawberry gelatin with lots of whipped cream!!
This works well for me as it is my chores day, so no big mess!! Here are the recipes!!
Chicken and Broccoli Casserole Supreme
Serves 6
3 chicken breasts (season with McCormick's Montreal Chicken)
2 T. olive oil
2 pkgs. frozen broccoli & cheese, thawed
1 medium onion, chopped
1 red bell pepper, chopped
3 garlic cloves, crushed
1 can mushroom soup
1 can cream of chicken soup
1 cup mayonnaise
1 tsp. lemon juice
1 tsp. curry
1 cup shredded sharp cheddar
1/2 c. seasoned breadcrumbs
1 small can water chestnuts, drained and chopped
Heat oil in large skillet and brown chicken well. Take chicken out, cut up into chunks and set aside. Meanwhile, in same skillet, saute onion and red pepper till onion begins to golden, then add garlic and cook 2 more minutes. Add the chicken and mix well. Combine soups, mayonnaise, onions, chicken, water chestnuts, broccoli with cheese sause, curry & lemon juice. Mix well and pour into a greased 8x13 glass baking dish. Sprinkle breadcrumbs evenly over. Then sprinkle the grated cheddar cheese all over the top. Cook for 30-45 minutes til nice and bubbly and cheese has melted.
Romaine Salad with Feta, Mandarin and Cranberries
1/2 bag of torn romaine salad pieces
1 small can drained mandarins
1/2 c. dried Ocean Spray Cranberries
1/2 c. crumbled Feta cheese
1/2 c. chopped pecans
1 tomato, cut up into chunks
1 red bell pepper, washed and cut up
1/2 cucumber, washed and cut up
handful of croutons
Hellman's Citrus Splash, any flavor, they're great!
Toss everything together for a delightful salad.
