Recipe: Chicken and Noodles Soup

Chicken and Noodles Soup

1 stewing hen
3 pounds chicken wings (alone), or wings, necks & backs
carrots and celery, about 4 of each or more, rough cut
1-2 yellow onions
poultry seasoning
salt
white pepper
black pepper
cheesecloth herb packet (see note)
green onions, the whites rough cut, the greens very thinly sliced
1 chicken breast (or more if desired) from a fryer
4-6 eggs
flour
olive oil

In a large roasting pan, place the chicken, chicken parts (except for fryer breast) and veggies (Except sliced green onion greens). Roast on 475F for about 20 minutes, or until deep golden brown. Transfer to stock pot, deglazing roaster with water. Add cold water to pot, enough to cover the chicken and veggies complete. Bring to a very low, rumbling boil. Bubbles should be big, barely breaking the surface. Simmer for several hours, checking at least once every 30 min. Remove chicken and strain out veggies, returning stock to stock pot. Add herbs, onion greens, a dash each of salt, pepper, and white pepper. Simmer 30 minutes, then taste and adjust seasonings.

While simmering, I like to use that time to prepare the noodles. Simply whisk the eggs with a bit of olive oil, (not too much, were not making mayo!) salt and pepper if deride, and finally, the flour. For 4 eggs, add about 2 cups of flour to begin. Remember you can add more flour...you cannot take it out. Dough should be soft, somewhat sticky, and coming together from the sides of the bowl. Divide into manageable portions, no more than about 2/3 cup each. Roll out rather thinly on a liberally floured board, then slice with a knife into long strips. Dust, shake through a mesh strainer, etc to get excess flour off. Bring stock to a low boil, then begin to add noodles. Do NOT stir noodles for first 2 minutes, or they resulting mess will be gooey. In a few minutes, many noodles will arise to the surface. When they are cooked through they will be toothsome and delicious. Perfect for a chilly Halloween.
