Recipe: Winter Squash Soup
Soups Winter Squash Soup

Unfortunately I don't do recipes, but I can tell you how to make a great squash soup.
Roast some winter squash (butternut, acorn, pumpkin, or a combination or another squash, but use pie pumpkin, not the other kind)
Bake some orange sweet potatoes if you want, maybe some roasted carrots as well.
Puree with some stock, chicken, or vegetable.
Add "curry" spices. (Not curry per se, no one should use curry powder, but coriander and allspice and all that stuff. Maybe a chipotle, that would be nice.)
Add a bit of nut butter (peanut, almond, or ?)
Maybe add some honey or maple syrup, but just a little.
Add some yogurt.
Now to make it spectacular. Cut the top off a pie pumpkin and clean it out. Fill about a third of the way with water and bake (with the top in the oven) for about 45 minutes until soft, but not droopy. Pour soup into the pumpkin and bring to the table. Then scoop some of the pumpkin with the soup.
