Recipe: Chicken Cacciatore (more recipes)

Crockpot Chicken Cacciatore

2 Med Onions; sliced thin
3 lb Chicken; cut up
2 c Garlic; minced
1 c Tomatoes; 16 oz
1 ts Salt
1/4 ts Pepper
1 1/2 ts Dried oregano; crushed
1/2 ts Dried basil; crushed
1 Bay leaf
1/4 c Dry white wine
Cooked spaghetti

Place onions in slow cooker. On top of onions place chicken pieces,
garlic, tomatoes, tomato sauce, salt, pepper, herbs and wine. Cover
pot. Cook on low 6 to 8 hours, or high 3 to 4 hours. Serve chicken
with its sauce on spaghetti which you have prepared.

QUICK CHICKEN CACCIATORE

4 Chicken breast halves;boned skinless (1 lb total)
7 1/2 oz (1) can tomatoes; cut up
3/4 c Mushrooms; sliced fresh
1/4 c Onion; chopped
1/4 c Green pepper; chopped
3 tb Dry red wine
1 cl Garlic; minced
1 ts Oregano; crushed dried
1/4 ts Salt
1 tb Cold water
2 ts Cornstarch;

Rinse chicken; pat dry. In a medium skillet combine
undrained tomatoes, mushrooms, onion, green pepper,
wine, garlic, oregano, salt, and pepper; place chicken
atop vegetable mixture. Bring to boiling, reduce
heat. Cover; simmer about 20 minutes or till chicken
is tender and no long pink. Transfer chicken to a
serving platter; keep warm. Stir together water and
cornstarch; stir into skillet mixture. Cook and stir
till tickened and bubbly. Cook and stir for 2 minutes
more. Spoon sauce over chicken.

ANOTHER CHICKEN CACCIATORE


16 oz Italian plum tomatoes, Crushed
1/3 c Dry white wine
1 sm Onion, chopped
1 sm Green pepper, seeded and
Chopped
2 Cloves of garlic, minced
1 Bay leaf
1/2 ts Fennel seeds, crushed
1 ts Dried oregano, crushed
1/2 ts Ground coriander
1/4 ts Ground cinnamon
1/2 ts Crushed red pepper
2 lb Broiler chicken, cut into
Serving pieces with skin
And fat removed OR two
Whole chicken breasts,
Halved, with skin and fat
Removed
Juice of 1/2 lemon
1 ts Salt-free vegetable
Seasoning

Place tomatoes in small saucepan. Add all remaining ingredients
except chicken, lemon juice, and vegetable seasoning. Cover and
simmer for 5 minutes.

Season chicken with lemon juice and vegetable seasoning and broil
on both sides until lightly browned.

Arrange chicken pieces in baking dish sprayed with nonstick
cooking spray. Pour sauce over chicken.

Cover and bak in preheated 350F oven for 45 minutes, or until
tender.
Remove bay leaf.

EASY CHICKEN CACCIATORE

Ingredients------
1/4 c Olive Oil
1/2 ts Crushed Red Pepper
2 lb Boneless Chicken Breasts *
1/2 lb Thickly Sliced Mushrooms
Jar Ragu Spaghetti Sauce **
2 lg Sweet Peppers ***
1 lg Green Pepper ****
3/4 ts Dried Thyme -- crushed
2 tb Red Wine Vinegar
Hot cooked spaghetti or
- linguini

* Cut into thin strips ** 48oz Old World Style or use
home made *** Red or Yellow; cut into thin strips ****
Cut into thin strips

Heat olive oil and red pepper in a Dutch oven on
medium-high heat. Add chicken and saute 5 mins. or
until golden brown. Remove chicken from oven with a
slotted spoon; set aside. Add mushrooms; saute 4 to 5
mins or until tender. Stir in spaghetti sauce,
peppers, thyme, vinegar and chicken; bring to a boil.
Reduce heat and simmer 8 to 10 mins or until peppers
are just tender, stirring occasionally. Serve over
spaghetti or linguini.
