Chicken Caesar Salad
Yield: 6 servings
Dressing:
3 tbsp olive oil
2 tbsp grated parmesan cheese
2 tbsp lemon juice
1 tbsp water
1 tbsp light sour cream
1 tsp white Worcestershire sauce
1 tsp Dijon mustard
1/2 tsp anchovy paste or salt
1/4 tsp pepper
2 cloves garlic, minced
Salad:
4 cups torn romaine lettuce
1 cup sliced fresh mushrooms
1 1/2 cups shredded cooked chicken
In a small bowl, combine all dressing ingredients; blend well.
In a large salad bowl, combine all salad ingredients; mix well. Add dressing toss to coat, and serve immediately.
Makes 6 servings (1 1/2 cup each)
