Recipe(tried): Chicken Hunter Style

Chicken Hunter Style

1/2 c. flour
2 tsp. salt
1 fryer, 3 to 4 pounds, cut up into serving pieces
1/4 c. vegetable oil
2 c. canned tomatoes
2 medium onions, coarsely chopped
1 bell pepper (green pepper), coarsely chopped
1, 4 ounce can sliced mushrooms
1 clove garlic, minced
4 sprigs parsley, finely chopped
1 bay leaf

Combine flour and salt. Coat chicken with flour and brown in hot oil for 15 to 20 minutes, until golden brown. Reduce heat. Add vegetables and seasonings. Cover and cook over low heat for 35 minutes. Serve over fluffy rice. Serves 4. (I think that this would also be good served over orzo or any other pasta , as well.)
