READY MADE CHICKEN FOR LATER
1 whole chicken
2 quarts water
1 medium onion chopped
2 stalks celery
Salt and pepper, to taste
TO PREPARE THE CHICKEN BROTH:
Cut up chicken and debone and skin it reserve the skin and bones.
Add the bones and skin to a pot. Add 2 quarts water, onion, celery and salt and pepper to pot. Simmer for about 20 minutes.
Strain broth and cool. You can now freeze this in containers or even freezer bags for later use in recipes.
TO PREPARE THE CHICKEN:
Take chicken you have deboned and cut into bite sized pieces and cook it in a skillet with a finely chopped onion and salt and pepper. Simmer until chicken is done.
Cool and package for use later. Freeze it and defrost as needed. Makes about 3 recipes worth.
