CHICKEN MARSALA
1 pound boneless, skinless chicken breasts
1/2 cup flour (season with salt and pepper)
1/4 cup (4 tablespoons) butter
Salt and pepper to taste
6 oz Marsala wine
Dredge chicken in flour (shake off excess).
Heat butter in saute pan over medium heat.
Add chicken, cook 3 1/2 to 4 minutes, turn and cook an additional 2 minutes.
Add wine, let reduce 2 to 3 minutes. Add salt and pepper to taste. Transfer to plate and serve.
Makes 4 servings
