Recipe: Chicken Rockefeller (chicken breasts layered with spinach, bread crumbs, and Parmesan)

CHICKEN ROCKEFELLER

1 (10 oz.) pkg. frozen chopped spinach
1 egg, beaten
1/4 cup Parmesan cheese, divided use
1 cup Italian style bread crumbs
6 whole chicken breasts, boneless, skinless
Salt and pepper (to taste)
3 tbsp. melted butter or margarine

Cook spinach according to package directions; drain well and allow to cool.

Combine spinach, egg and 1 tablespoon Parmesan cheese; set aside.

Combine bread crumbs and remaining Parmesan cheese in a shallow baking pan and set aside.

Sprinkle chicken breasts with salt and pepper; roll each in bread crumb mixture. Place in a greased 13x9x2 inch baking dish. Place 1 heaping tablespoon of spinach mixture on each chicken breast, spreading to form small mound. Sprinkle with remaining bread crumb mixture and drizzle with butter.

Bake for 40 minutes at 350 degrees F.

Makes 6 servings
