Recipe(tried): Chicken Salad Deluxe Tomato Poppers

CHICKEN SALAD DELUXE TOMATO POPPERS

10 to 12 small to medium firm tomatoes
2 tablespoons olive oil
1 medium yellow onion, finely chopped
1 medium red onion or Vidalia onion, finely chopped (optional)
2 to 3 stalks celery, finely chopped
1/2 medium red bell pepper, chopped finely
1/2 medium yellow bell pepper, finely chopped
2 to 3 boneless, skinless cooked chicken breasts, chopped and shredded
1 (8 ounce) package cream cheese, room temperature
1/4 to 1/2 cup sweet relish, drained or sweet pickles, chopped (optional)
1/4 cup Miracle Whip Salad Dressing
1/4 cup sour cream
1 teaspoon garlic powder
Salt and pepper, to taste
Paprika or Old Bay Seafood Seasoning, to taste (for garnish)

Cut top from tomatoes extracting 2/3 of the insides of each tomato (save tomatoes insides for omelets). Set aside

Warm the olive oil in a skillet. Add onions to the skillet and saute until almost translucent. Add the celery and chopped peppers to the skillet and continue cooking (do not caramelize the onion). Once vegetables are limp remove from heat. Set aside and cool.

Warm chicken in microwave to lukewarm.

In a mixing bowl mix cream cheese, relish or chopped pickles (if using) Miracle Whip, sour cream, garlic powder and salt and pepper. Stir in vegetable mixture then fold in chicken.

Spoon the cream cheese mixture into center of each tomato and then sprinkle with either paprika or Old Bay Seafood Seasoning. Chill in fridge at least an hour.

Makes 10-12 servings
