Recipe(tried): Crab Pinwheel Appetizers (make ahead)

CRAB PINWHEEL APPETIZERS

1 pkg (6 to 8 oz) frozen Alaska crab, thawed
1 (8 oz) pkg cream cheese, softened
1/4 cup mayonnaise
1 cup shredded Swiss cheese
3 tablespoons sliced green onions
1 tablespoon minced fresh parsley
1/8 teaspoon dry mustard
1 dash freshly ground pepper
1 pkg large tortillas

Drain and slice crab; set aside.

Combine cream cheese with mayonnaise. Once mixed add cheese, green onions, parsley, mustard, pepper and then stir in crab meat.

Place piece of plastic wrap about 4-inches longer than the tortilla is wide on counter; place tortilla on top. Spread crab mixture over tortilla to within 1/2-inch of edges. Roll up jelly roll fashion, wrap tightly in plastic wrap twisting ends sealing well. Cool in refrigerator for a couple of hours.

Cut into 1/2-inch slices and server or place in plastic container and seal and freeze for quick appetizers.
