Recipe(tried): CHOARONI Re. Italian Cookie ..ZEPPOLE

Misc.

Hi Choaroni, There are a few "fried" Italian cookies. The most popular is the
Zeppole. Hope this is what you are looking for.

ZEPPOLE
1 pkg. dry yeast
3/4 cup warm water
2 eggs
2 TBS. granulated sugar
2 1/2 cups all-purpose flour
1/2 tsp. salt
Vegetable oil for frying
Confectioners sugar

1. Sprinkle yeast onto water and stir to dissolve. Let stand 5 minutes. Stir in
eggs and sugar. Add flour and salt and stir until mixture is smooth.
2. Place in greased bowl and cover. Allow to rise until double in bulk, about 1
hour. Punch down and knead for a minute. Allow to rise again until double in
bulk, 30 to 45 minutes.
3. Pour oil to depth of 2 inches in skillet or deep-fryer. Heat to 400 degrees.
Drop dough by teaspoon into hot fat. They form their own shapes. When brown,
turn on other side. Drain on paper towel or brown paper.
4. When cool, sprinkle with confectioners sugar. Makes about 30. ENJOY!
