Christmas Cookies
We make these every Christmas. One of our favorites.
Recipe By : Elberta Rhoads -= Mother's Cookbook
Makes: 48
1 cup butter
1 1/2 cups sugar
3 large eggs
1 tablespoon cocoa
1 teaspoon cinnamon
1 teaspoon mace
1 teaspoon nutmeg
1/2 teaspoon clove
1/2 teaspoon allspice
3/4 teaspoon soda
1/2 cup apple -- finely chopped
1 cup white raisins
1/2 pound candied pineapple, finely chopped
1/4 pound candied orange peel, chopped
1/4 pound candied lemon peel, chopped
1 package dates -- chopped
1 pound chopped pecans
1 tablespoon bourbon
3 cups flour
Cream together butter, sugar and eggs. Beat in flour, cocoa and spices. Meanwhile soak candied fruits in bourbon. Add remaining ingredients, including soaked fruits and mix well. On a greesed cookie sheet spoon out half dollar size cookies, spaced 1/2 inch apart. In a preheated 350 degree oven, cook 12-15 minutes.
