Recipe: Melting Moments with Almond Butter Cream Filling, Frosting Melted Moments, and Melting Moments with Lemon Frosting

ALMOND BUTTER CREAM FILLING
1 cup butter, softened
1/2 cup confectioner's sugar
2 cups flour
Cream butter and sugar until fluffy. Blend in flour. Beat 5 minutes or until satin smooth. Chill several hours or overnight until firm enough to handle.
Roll half-teaspoon measures of the dough into marble-sized balls. Place 1-inch apart on ungreased cookie sheets.
Bake at 350 degrees for 15 minutes. Cool.
Put butter cream frosting between 2 cookies. Let stand until firm. Don't make too far in advance.
ALMOND BUTTER CREAM FILLING:
1 1/2 cups confectioner's sugar
3 tbsp. butter, softened
2 tbsp. milk
1/4 tsp. almond extract
Blend all ingredients together until smooth. Divide frosting in half and color 1 part pink, the other part green.
FROSTED MELTED MOMENTS
1 cup butter, softened
1/3 cup powdered sugar
1/4 tsp. almond extract
3/4 cup cornstarch
1/8 tsp. salt
1 cup flour
Cream butter. Add sugar gradually. Add almond extract. Blend in sifted dry ingredients. Chill.
Shape teaspoonfuls of dough into balls. Place on ungreased cookie sheets.
Bake at 375 degrees for 5-10 minutes. Cool.
FROSTING:
2 tbsp. butter
1 cup powdered sugar
1/2 tsp. vanilla
1/4 tsp. almond extract flavoring
Cream
Melt butter, remove from heat. Stir in sugar, flavorings and food coloring. Add cream to make of spreading consistency.
MELTING MOMENTS WITH LEMON FROSTING
Makes approximately 6 dozen
1 cup butter, softened
1/3 cup sifted confectioner's sugar
1 1/4 cups flour
1/3 cup cornstarch
Cream butter, add sugar and beat well. Gradually add flour and cornstarch, beat until smooth.
Drop mixture by level teaspoons onto ungreased cookie sheets.
Bake at 350 degrees for 10-12 minutes. Cool completely and frost with lemon frosting.
LEMON FROSTING:

2 tbsp. lemon juice
1 tbsp. grated lemon rind
