Recipe: Ciabatta

I make ciabatta a lot. It is very chewy and is considered traditional italian. If you check www.kingarthurflour.com you will find a great recipe for it. I know its a rather thin loaf but if you slice it in half through the center you can spread it with a good olive oil. Then layer with italian meats like ham and salami, top with roasted peppers, sundried tomatoes, onions and other things. Wrap tightly and put a heavy weight on it. It makes a great sandwich for a picnic. When you do this to ciabatta it becomes pan bagga (or something like that). Try it - it's really great!
