Recipe: Citrus Sweet Potatoes

Citrus Sweet Potatoes

Makes 6 serving

2 pounds sweet potatoes
1 tablespoon orange rind; grated
1/3 cup (each) orange and grapefruit juice
1/4 cup brown sugar; firmly packed
2 tablespoons butter; melted
2 tablespoons lemon juice
1 teaspoon salt
1/2 teaspoon pepper

Peel and cut sweet potatoes into 1/4-inch slices; arrange, overlapping slightly, in 13- x 9-inch (12 cup) baking dish. Combine remaining ingredients; pour evenly over sweet potatoes. Cover tightly with foil; bake in 375 F oven for 40 minutes. Uncover and bake, basting every 10 minutes, for about 30 minutes longer or until tender and glazed.
