Recipe(tried): Cobbler Recipe

Desserts - Fruit

This recipe is my favorite...but it does have lemon extract in it:

COBBLER

2 cups sugar
4 eggs
3 cups flour
2 sticks margarine
1 tsp. baking powder
tsp. lemon extract
1 can pie filling (any flavor)

Mix ingredients in order given. Spread in buttered pan, reserving 1 cup of batter for top. Spread pie filling, 1" from sides of pan. Drop remaining batter by spoonfuls on top of pie filling. Bake at 350 degrees until golden brown, 45 minutes to an hour or so. Serve warm, topped with vanilla ice cream. Note: I have spread this into a large baking dish (10" x 15") and had enough batter for 2 cans of pie filling.

Personal Note: I make my own pie filling most of the time. For blackberries, I make my regular Blackberry Pie filling recipe and use that...this is YUM!
