Recipe: Coca-Cola Cake

Coca Cola Cake

2 cups flour
2 cups sugar
2 sticks butter
1 cup Coca Cola
3 Tablespoons cocoa
1/2 cup buttermilk
2 eggs - beaten
1 teaspoon baking soda
1 teaspoon vanilla
2 cups miniature marshmallows

Icing:
1 stick (1/2 cup) butter
6 Tablespoons Coca Cola
1 box powdered sugar
1 teaspoon vanilla
3 tablespoons cocoa
1 cup pecans - toasted

Combine flour and sugar. Mix well. Heat butter, coca cola, cocoa and bring to a boiling point. Pour over flour and sugar. Add buttermilk, eggs, baking soda and vanilla. Mix well. Then add marshmallows and pour into a 9 x 13-inch greased cake pan. Bake for 30 to 35 minutes at 350 degrees F. Icing: Cream butter, add remaining ingredients and beat well. Pour over cake while still in the pan. This cake will keep for days if kept in the pan in which it was baked.
