Recipe: Conch Chowder

Conch Chowder

3 lb ground conch
1/2 lb salt pork, ground
2 medium onions, finely chopped
4 cloves garlic, finely chopped
1 large green pepper
1 28oz can tomatoes, drained and chopped
6oz tomato paste
1 tsp poultry seasoning
10 bay leaves
2 tbsp barbecue sauce
1 1/2 teaspoons salt
1/2 tsp pepper
2 qt water
1 tbsp vinegar
3 lb white potatoes, peeled and cubed

In a large skillet over medium heat fry pork, add onion, garlic, and green pepper; saute until tender. Add next eight items. Simmer over low heat for 10 minutes.
In a six-quart saucepan, combine water, vinegar and conch; bring to a boil. Stir in tomato / pork mixture and simmer about 2 hours. Add sliced potatoes and simmer 20 to 30 minutes until potatoes are tender. Remove bay leaves before serving. Serve hot.
