Recipe(tried): Corn Pudding

Side Dishes - Vegetables
Hi Sheila,
I have a corn pudding recipe that is close. The only thing mine doesn't have is sugar, but my family always raves about this recipe. Thanksgiving and Christmas aren't the same without it.

Mom's Corn Pudding (Casserole)

1 small onion, chopped fine
2 eggs, slightly beaten
2 rounded TB of flour
1 level tsp. salt
1 level tsp. pepper
1 cups milk
1 can cream-style corn (14 oz)
1 can niblet corn (14 oz)
2 tsp. baking powder
4 TB butter or margarine (melted)
About 1 or 2 cups crushed crackers (like Saltines)

Lightly grease a casserole dish. Mix all together in the dish. Bake at 350 F for 1 hour. Add crushed crackers over casserole during last 20 minutes of cooking. (I sometimes add them at the beginning of cooking ). Enjoy!
