Corn Stuffing Balls
This is blatantly lifted from Mabel Hoffman's Crockery Cookery (HPBooks, revised edition 1995) with one modification.

This is a family favorite except I don't try to make it into balls. I just spread it in my cooker, pour the butter over the top, and then serve it by scooping it out with an ice cream scoop.

1 small onion, chopped
1/2 cup chopped celery with leaves
1 (17 oz) can cream-style corn
1/4 cup water
1/8 tsp pepper
1 tsp poultry seasoning
2 cups herb-seasoned stuffing mix (about 8 oz)
2 eggs, slightly beaten
1/4 cup margarine or butter, melted

In a bowl combine everything except melted butter. Form into 8 balls. Place in bottom of a slow cooker; spoon melted butter over balls. Cover and cook on LOW 3 1/2 to 4 hours.
