Recipe: Grated Radish Salad with Lime-Dijon Dressing

Salads - Assorted
GRATED RADISH SALAD

FOR THE DRESSING:
1/2 teaspoon coarse salt
1/4 teaspoon fresh ground pepper
Juice of 1 lime
3 tablespoons virgin olive oil
1 teaspoon mayonnaise
1/2 teaspoon Dijon mustard
FOR THE SALAD:
4 large radishes, trimmed
1 medium carrot
1/2 sweet onion, thinly sliced
4 small handfuls mixed spring lettuces

In a wooden bowl whisk together the components of the dressing.

On the coarse side of the grater shred the radishes and carrot right into the dressing. Add the sliced onion and toss with your hands. Refrigerate for about 30 minutes before adding the lettuce.

Add the lettuce, toss again and serve.

Serves 4-6
