Makes 45 cookies
This recipe originated on the back of a Kellogg's Cornflakes box years ago. A good way to use up any extra cornflakes you have hanging around. I just made these yesterday and got 45 cookies.
4 egg whites
1/4 teaspoon cream of tartar
1 teaspoon vanilla
1 1/3 cups sugar (I found these too sweet so I use 1 cup sugar)
1 cup chopped pecans (I've used walnuts)
1 cup flaked coconut
3 cups corn flakes
Preheat oven to 325F.
In large mixing bowl beat egg whites until foamy. Stir in cream of tartar and vanilla. Gradually add sugar beating until stiff and glossy. Fold in pecans, coconut and cornflakes. Drop by rounded measuring tablespoon onto well greased or parchment lined baking sheets.
Bake for about 20 minutes or until lightly browned. Remove immediately and place on wire rack to cool.
CORNFLAKE COOKIES
1 cup white sugar
1 cup brown sugar
1 cup butter
2 eggs, well beaten
1 tsp. vanilla
2 cups cornflakes, crushed
2 cups flour, sifted with 1/2 tsp. soda & 2 tsp. baking powder
1 cup coconut
1 cup chopped nutmeats
Combine in order given. Drop by the teaspoon on cookie sheet. Bake at 375 degrees until lightly brown.
CORNFLAKE COOKIES
Cream:
1 cup sugar
1 cup brown sugar
1 1/2 tsp. vanilla
Sift together and add to creamed mixture:
1/2 tsp. baking soda
1/2 tsp. salt
2 tsp. baking powder
Stir in:
1 cup coconut
1 1/2 to 2 cups crushed cornflakes
Drop by teaspoonfuls on cookie sheet.
Bake at 325 degrees 12-15 minutes.
CORNFLAKE COOKIES (IN A JAR)
1 1/4 cups white sugar
1/4 teaspoon salt
2 1/2 cups coconut
1 1/2 cups corn flake cereal
Place sugar and salt in a clean mason jar. Pack down tight so everything will fit in the jar. (Use a spoon or a mallet.) Add other ingredients, one item at a time, packing each layer down (put cornflakes in last and don't crunch them down!).
Put the lid on the jar and tie a ribbon around the lid. You can add a personalized label, if you wish. As an added touch, tie a wooden spoon to the lid with a piece of ribbon.
Print out the following instructions on a gift card and tape the card to the jar:
Whip 3 egg whites until stiff. Add 1/2 teaspoon of vanilla extract. Stir in the ingredients from this jar until well combined. Drop teaspoons of dough on an ungreased cookie sheet. Bake for 15 minutes at 325 degrees F. Share with a friend.
