Recipe(tried): Coronation Chicken

this cold chicken salad recipe is great.

Coronation Chicken

1 cooked chicken, 1 / 4 cup light olive oil,
1 large onion, finely chopped,
1 tablespoon mild curry powder,
1 tablespoon tomato sauce,
1 tablespoon apricot jam,
1 tablespoon mango chutney,
1 / 2 cup oil-based mayonnaise,
1 / 2 cup cream,

Carefully remove the skin from the chicken,
Heat the oil in a small saucepan and fry the onion until wilted and pale gold. Add the curry powder and stir.
Remove from heat and mix in the tomato sauce, apricot jam and mango chutney. If there are pieces in the jam or chutney, chop these very small first. Transfer to a basin and cool. Stir in the mayonnaise.
Whip the cream until it holds soft peaks and gently fold through the other mix a little at a time.
Pour about 1 / 3 over the base of a serving dish and spread out thinly. Place some chicken on top and repeat the layers, finishing with sauce.
Chill for at lease two hours.

You could also use chicken breast filets to make this. Poach the filets until cooked and slice thinly.
