First, I posted my salsa recipe below in Heirloom recipes, though it isn't an heirloom recipe. That is just where I happened to see your post looking for a salsa recipe. I was just looking through my Barefoot Contessa Cookbook. There are several great sounding salad recipes. Let me know if you would like me to post any or a couple of them. There are recipes for: beets with orange vinaigrette (beautiful colors), curried couscous, grilled lemon chicken salad, grilled salmon salad, and szechuan noodles. You could also grill vegetables ahead of time and serve them at room temperature. Chicken Caesar salad is one other idea that most people seem to like. I hope this gives you a few more ideas for feeding those important people:-)
