COTTAGE CHEESE CUSTARD PIE
1 1/2 cups cottage cheese
4 eggs, slightly beaten
1 tsp grated lemon rind
2 tbsp lemon juice
1/2 cup sugar
2 tbsp flour
1 tsp salt
1 cup milk
1 (9-inch) unbaked pie crust
Preheat oven to 425 degrees F.
Arrange pie crust in pan and bake shell 8-10 minutes. Remove from oven and reduce oven temperature to 325 degrees F.
Sieve cottage cheese. Add egg, lemon rind and juice; set aside.
Thoroughly mix together sugar, flour and salt. Add to cottage cheese and mix well. Stir in milk.
Pour filling into pie crust.
Bake in 325 degrees F oven 40-50 minutes or until a knife inserted in the center comes out clean. Cool on rack before serving.
