Country-Style Chicken Kiev

FILLING
1/4 cup butter or margarine, softened
2 tablespoons chopped green onion
1 tablespoon minced fresh garlic
1/4 teaspoon salt
1/8 teaspoon cracked pepper

CHICKEN
4 whole boneless chicken breasts, skinned
1/4 cup butter or margarine
2/3 cup crushed buttery crackers
1/4 cup chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon thyme leaves
1/8 teaspoon cracked pepper

In medium bowl stir together all filling ingredients. Divide into 4 equal portions. Freeze portions at least 30 minutes. Heat oven to 350. Flatten each chicken breast to about 1/4-inch thickness by pounding between sheets of waxed paper. Place 1 portion of frozen filling onto each flattened breast. Roll and tuck in edges of chicken; secure with wooden picks. In 9-inch square baking pan melt 1/4 cup butter in oven (4 to 6 minutes). Combine remaining chicken ingredients. Dip rolled chicken in melted butter, then coat with crumb mixture. Place chicken in same pan; sprinkle with remaining crumb mixture. Bake for 55 to 65 minutes or until fork tender. Remove wooden picks before serving.

NOTE: Because these take a little time to make, I will normally make a double or triple batch and freeze the extras.
