Recipe: Cornish Hen and Wild Rice Stuffing

Cornish Hen and Wild Rice Stuffing

2 cups chopped onion
1 cup chopped celery
3 clove garlic
1 red bell pepper
1 cup mushrooms
1/2 cup wild rice
1 cup long grain rice
1/4 tsp cayenne pepper
1/4 tsp fresh ground pepper
1/2 cup red wine
1 tbsp honey
1 can chicken broth

Saute onions, garlic, celery and pepper in a couple of tablespoons olive oil. Add spices. Use your own spices if you don't like mine. Add wine. Simmer 5 minutes. Add rice, simmer 10 minutes. Add broth and 1 cup water. Cook 45 minutes, add mushrooms just before you stuff the birds. I make about 3 birds for my two kids and I. The stuffing won't all go in the birds, so put it in the pan and put the birds on top of the rice when you cook them. Yummy.
