Recipe(tried): Crab Meat Wontons (crab rangoon recipe - 2 versions)

We have 2 kinds of "crab rangoon" at our restaurant.
version 1
crab meat wontons
snow crab meat lumps
cream cheese
minced red and green bell peppers
wonton skins
Bring out cream cheese from fridge and let it sit till it has reached room temp.
stir fried bell peppers for a few seconds in a hot pan with light salt, pepper, and rice wine.
let bell peppers cool to room temp.
boil crab meat quickly in salted hot water
let crab meat cool to room temp.
mix bell peppers with cooked crab meat and cream cheese.
let the mixture sit in the refrigerator for a few hrs.
place crab mixture in the center of wonton skin.
wet the edges with a beaten egg and fold and press down.
fried at 350 degree oil for 3 min. or until golden cripsy and enjoy with sweet and sour sauce.
crab wonton version 2.
follow recipe above but replace snow crab with fake crab meat and add sugar to crab mixture.
Sorry, I don't have the exact measurement for home use.
