Recipe: Cranberry Relish (with pineapple and cinnamon - served warm or cold)

CRANBERRY RELISH

1 (1 lb. 4 oz.) can pineapple chunks
1/2 cup syrup (from pineapple)
3/4 cup sugar
3 thin lemon slices
3 thin orange slices
1 stick cinnamon
3 cups fresh cranberries
Salt to taste

Drain pineapple chunks and reserve. Pour pineapple syrup into small saucepan.

Add sugar, lemon and orange slices and cinnamon to saucepan. Bring to simmering and cook 5 minutes.

Add cranberries and simmer until they begin to burst.

Add drained pineapple chunks.

Serve warm or cold. Great to serve with roast turkey instead of standard cranberry sauce.

Makes about 2 1/2 cups
