Recipe: Cream Cheese Icing (using honey) for Kim (not Marta Stewart's)

CREAM CHEESE ICING

10 oz. cream cheese, softened
3 tbsp. fructose (or sugar)
1 tbsp. milk
1 tsp. vanilla
1/8 to 1/4 cup honey

Whip cream cheese on high speed of mixer until very fluffy; add fructose (or sugar), milk, and vanilla; beat until very smooth.

Add honey in a steady stream while mixer is running, adding until frosting reaches desired consistency.

Makes 1 1/2 cups frosting
Will frost top and sides of 1 6 1/2 x 10 inch cake.

Hint: Don't be alarmed if a yellow beaded substance appears on the frosting after a day or two -- it's just the honey showing its color!
