Recipe: Creamy Mocha Fudge

CREAMY MOCHA FUDGE

1/2 cup unsweetened cocoa powder
3 1/2 cups powdered sugar
1/2 cup butter
2 tablespoons coffee, very strong
1/4 cup heavy (whipping) cream
1/2 cup pecans, coarsely chopped 

Stir together cocoa powder and icing sugar in large bowl till well blended. There should be no lumps. 

Melt butter over medium heat; remove from heat. Add coffee and heavy cream. Add to sugar mixture and beat with an electric beater just till smooth.

Fold in pecans. Turn into wax paper-lined loaf pan. Smooth top with knife dipped in warm water. Refrigerate till set.

When set, turn out and cut into squares.
