Recipe: Curried Eggs

Curried Eggs

2 cups plain yogurt
3 Tablespoons flour
3/4 teaspoon curry powder
6 hard-cooked eggs
1/4 cup sliced green onions
2 Tablespoons chutney, optional
1/4 teaspoon salt
*Dash of pepper, optional
One 10-ounce package chopped broccoli, cooked and drained

In medium saucepan, blend together yogurt, flour, and curry powder. Cut slices from center of 2 eggs for garnish (4 slices). Chop all remaining eggs. Stir chopped eggs, onions, chutney, salt, and pepper into yogurt mixture. Cook over medium-low heat, stirring constantly, until mixture is just bubbly. Arrange cooked broccoli in ramekins. Spoon hot egg mixture over broccoli. Garnish with reserved egg slices. Serve hot.

Serves: 4.
