Recipe: Apple Oat Pancakes
Breakfast and BrunchAPPLE OAT PANCAKES
1 medium to large New York State Empire apple, cored, peeled and grated
1 cup quick oats
1 cup skim milk
1 cup plain yogurt
3 eggs
3/4 cup whole wheat flour
3/4 cup all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/4 cup vegetable oil
Pancake syrup
In a large mixing bowl, combine apple, quick oats, skim milk and plain yogurt; stir. Let sit for 15 minutes.
Add eggs and stir to combine.
In another bowl, sift together whole wheat flour, all-purpose flour, baking soda and baking powder. Add flour mixture to the apple oat mixture and stir well. Add oil and mix.
Drop by large spoonfuls onto a hot, lightly oiled griddle; cook over medium heat until well browned both sides.
Serve with pancake syrup.
Makes 10-12 pancakes
