Recipe: Scotch Eggs

Scotch Eggs

Hard boiled eggs
Pork breakfast sausage
Bread crumbs
1 egg, beaten

Have one egg per person; wrap each peeled egg in sufficient sausage to make a little ball around the egg. Brush with beaten raw eggand roll in breadcrumbs. Put in refrugerator and get them cold; will keep covered overnight. Put an inch of oil in a skillet and get it very hot. Place eggs in hot oil and fry until sausage is done, about 15 minutes. Drain off excess oil and cut in half lengthwise. Serve immediately. Great for brunch, supper or hors d'oeuvres.
