DANISH SPRITZ COOKIES
1 cup (2 sticks) butter, softened
2/3 cup sugar
3 egg yolks
1/2 teaspoon almond extract
2 1/2 cups sifted all-purpose flour
Chocolate shot and colored decorating sugar for garnish (optional)
Preheat the oven to moderate (350 degrees F.)
Beat together the butter, sugar, egg yolks, and almond extract in a large bowl with an electric mixer until fluffy. Stir in the flour, blending well.
Spoon the dough into a pastry bag fitted with a star tip or into a cookie press with a star plate. Press out the dough into 3-inch lengths, 1 inch apart, on ungreased cookie sheets. Gently push into wreaths, "S" shapes, candy canes, or leave straight.
Bake in the preheated moderate oven to (350 degrees F) for 8 to 10 minutes or until the edges are lightly browned.
If you wish, brush the warm cookies with corn syrup and sprinkle with chocolate shot or colored sugar. Cool on wire rack.
Makes 4 dozen cookies
