Debbie's Fauxtatoes

1/2 to 1 head of cauliflower
3 oz cream cheese (1 small package)
1 tbsp butter
salt and pepper to taste
Steam or boil cauliflower until soft using chosen method.
Drain well and put in a food processor equipped with steel blade. Add in the cream cheese, butter, salt and pepper - and turn on food processor and blend until mixture is smooth and creamy.
Sharon's Mashed Cauliflower
I know that everyone does it, but my mashed cauliflower recipe has fooled even the most finicky kids.
Cook the cauliflower to extreme soft stage
Put in food processor with about 2 tablespoons of cream cheese, 1 tbsp
of margarine or butter, and what makes it taste so great, is about 1 tsp of instant chicken or beef broth powder or paste ( I "better than bouillon chicken base)
Whip it up in the food processor until it is the consistency of mashed potatoes, and then I stick it into the microwave for a few minutes to reheat it up and meld the flavors. It is SUPER!
